An intimate long-table evening set in Fairmont Waterfront's rooftop garden, celebrating the best of the Pacific Northwest.

Surrounded by our Rooftop Garden & Apiary, begin with a garden-to-glass cocktail and an interactive honeybee encounter. Take a seat among the blooms for a multi-course Province-to-Plate dinner curated by Executive Chef Harris Sakalis. Each course showcases seasonal ingredients from local farms and our own rooftop harvest, thoughtfully paired with exceptional BC wines that reflect the region’s distinctive coastal terroir.

Joining us in the rooftop garden are four celebrated BC wineries, each expertly pairing their wines with every course throughout the series.
