Published on Main x State Bird Provisions x Deer + Almond

On October 13, 2026, Vancouver’s own Published on Main will welcome chef-founder Stuart Brioza of San Francisco’s Michelin-starred State Bird Provisions and chef-owner Mandel Hitzer of Winnipeg’s Deer + Almond for a special one-night collaboration dinner with chef-partner Gus Stieffenhofer-Brandson. The three chefs will cook side by side, presenting a multi-course tasting menu inspired by three cities: Vancouver, San Francisco and Winnipeg.

This evening has been years in the making. Stieffenhofer-Brandson and Brioza first connected in the early days of Published on Main and have since cooked together at both State Bird Provisions in San Francisco and RAW:almond in Winnipeg, while Hitzer, a longtime friend and colleague of Stieffenhofer-Brandson's, later joined the pair at State Bird.

The three chefs will draw on a shared ethos of local ingredients, international inspiration from their travels, and expressive flavours.

Tickets include a multi-course tasting menu with beverage pairings.

State Bird Provisions, founded by Brioza and Nicole Krasinski, is celebrated for its inventive small plates and interactive style of dining, and is a recipient of recognition from the James Beard Foundation. Deer + Almond, led by Hitzer, has become a defining part of Winnipeg’s dining scene and was ranked No.50 on Canada’s 100 Best Restaurants 2026, with Hitzer honoured with the 2025 Community Leadership Award.
