Cellar Series Wine Dinner

Join us for an intimate evening in partnership with DaSilva Wines, where each course is thoughtfully paired to highlight the depth and character of their Okanagan expressions.

The night begins with a bright and briny amuse of Punheta de Bacalhau— salted cod tossed with fingerling potatoes, olives, and peppers, alongside a lively Pinot Gris/Viognier to awaken the palate.

From there, a crisp Chardonnay complements a vibrant Humboldt squid salad, layered with celery, fennel, endives, and a delicate champagne vinaigrette.

Earthy notes take centre stage with a forest mushroom ragu over nero spaghetti, paired with an elegant Pinot Noir that mirrors its depth and richness.

The evening deepens with braised beef cheeks, accented by blackberries and juniper, matched with a structured Cabernet Sauvignon that brings warmth and intensity.

To finish, a playful yet refined cherry dessert, featuring mille-feuille, chocolate, and port wine curd, is paired with a harmonious ‘Nobreza’, a Merlot, Cabernet Sauvignon, and Cabernet Franc blend.

A celebration of flavour, texture, and thoughtful pairing, this is a night designed to be savoured.
